SCD Daily Food Log #12 + Rosemary Burger + Avocado Lime Salad Recipes

Today's food log and two more quick & easy SCD recipes! 
 
AM:
  • H20
  • Coffee infused with Ganoderma + a hint of Soy Creamer (Non-GMO, Organic) and Saigon Cinnamon
  • Breakfast/Brunch: (at Kirbey Lane)
    • Egg-White Omlette w/smoked salmon, red onion, avocado + tomatoes
    • Grilled Veggies
    • 1/4 cup Black Beans
PM:
  • H20
  • Snack:
    • 1/3 cup Spicy Cashews
  • Iced Coffee
  • Dinner:
    • Rosemary Burgers (see recipe below)
    • Avocado Lime Salad (see recipe below)
    • Grilled Poblano Peppers
  • H20 
Rosemary Burgers Recipe 
Ingredients:
  • 1 lb Ground Beef (preferably Organic + Grass Fed)
  • 1 tsp. Sea Salt
  • 6 cloves Garlic (chopped)
  • 2 Sprigs Fresh Rosemary
  • 1 Jalapeño (chopped)
  • 2 tbsp. Olive Oil
Directions:
  1. Mix olive oil, salt, jalapeño, garlic and rosemary together.
  2. Knead beef into mixture until well-blended.
  3. Separate into 4 patties.
  4. Grill for 25-35 min or until cooked.
Avocado Lime Salad Recipe
Ingredients:
  • Baby Spinach
  • 1/2 tsp. Sea Salt
  • Juice of 2 Limes
  • 1 Large Avocado (sliced)
  • Sliced Red Onion (not too much)
  • 2 tbsp. Olive Oil
Directions:
  1. Toss Avocado, Spinach, and Onion together in bowl
  2. Pour lime juice, olive, oil and sea salt on top and toss again.

That's all for today :) Just one more day till cheat day - which happens to be the day we'll be celebrating my birthday this year! Going to enjoy the first day of Austin Restaurant Week this Sunday as part of the celebration :)
