Coconut Chia Pudding – Vegan, Keto & Paleo, Whole30, Pegan

We love this healthy recipe that’s so easy it can be made with one hand while holding a baby, takes 5 min or less of prep time and just needs a few hours in the fridge to chill. 


Why we love it: breakfast or snack on the go, low carb, plant-based protein and full of omegas!

Here’s what you’ll need:

  • 1 can full fat coconut milk
  • 1/2 cup chia seeds
  • 1 cup boiling hot water 
  • Suggested toppings: (depending what diet you are or aren’t following)
    • Cinnamon 
    • Cacao powder
    • Coconut sugar
    • Honey 
    • Raisins or Dates or Goji Berries
    • Fresh berries 
Pour chia seeds into a large mason jar or glass dish and add hot water. Mix well until chia seeds are no longer stuck to the sides then pour in the coconut milk and mix until all is well blended. Cover and store in fridge for 2-3 hours. Add desired toppings and enjoy!
