SCD Daily Food Log #11 + Lamb Curry Recipe

Today's food log...
 
AM:
  • H20
  • Coffee infused with Ganoderma + a hint of Soy Creamer (Non-GMO, Organic) and Saigon Cinnamon
  • Breakfast: 
    • 1 cup Spicy Lamb Curry (made this from scratch-see recipe below)
    • 1/2 cup Black Beans
PM:
  • H20
  • Snack:
    • 1/4 cup Pistachios
    • 1/4 cup Peanuts
  • Bootcamp Workout Class at X-Train (www.X-TrainFit.com)
  • Dinner:
    • 1 cup Leftover Curry
    • 1 cup Black Beans
    • 1/2 Avocado
  • H20 

Spicy Lamb Curry Recipe 
 
Ingredients:
  • 2 cans Diced Unsalted Tomatoes
  • 1 cup Beef Broth
  • 1/2 lb Lamb for Stew (chopped)
  • 1 Red Bell Pepper Chopped
  • 2 cups Mushrooms Sliced
  • 1 Yellow Onion Chopped
  • 6-8 Cloves of Garlic Chopped
  • 2 tbsp. Curry Powder (make sure it's not a cheap blend)
  • 1-3 tbsp. Cayenne Pepper (depending how spicy you like it :)
  • 4-5 Bay Leaves
  • 1 tsp. Sea Salt
  • 2 tbsp. Macadamia Nut Oil
Directions:
  1. Saute Garlic, Onions, Mushrooms & Bell Peppers in Macadamia Nut Oil and add half amount of each spice.
  2. After onions become translucent add both cans of tomatoes and beef broth.
  3. Add Lamb.
  4. Add rest of spices
  5. Bring to boil. Let boil for 5 min.
  6. Cook on medium heat for 20-30 min.
  7. Reduce to simmer for 10-15 min untill consistency is thicker, then serve!

  1. Thanks for the new recipe! Do you guys not eat lunch? By lunch time I'm starving, but I guess because I don't eat any protein at breakfast. I need to start planning ahead!

  2. So what usually happens is that we eat kind of a late breakfast (more like a brunch) and we eat a lot of protein with our meal that we aren't hungry till dinner time - if we do get hungry we'll just snack till dinner time - it just depends on how busy we are ;)
