SCD Daily Food Log #11 + 2 Delicious Recipes

Here's what we ate today - plus 2 easy, delicious recipes!
AM:

  • H20

  • Coffee infused with Ganoderma + a hint of Soy Creamer (Non-GMO, Organic) and Saigon Cinnamon
  • Breakfast/Brunch:
    • 1 Spicy Grilled Chicken Breast (see recipe below)
    • 1 cup Roasted Brussels Sprouts (see recipe below)
    • 1/2 cup Black Beans
PM:
  • H20
  • Snack:
    • 1/2 cup Leftover Brussel Sprouts
  • Iced Coffee
  • Dinner:
    • Scrambled Eggs
    • 1/4 cup Black Beans
    • 1/2 Avocado
  • H20 
Spicy Grilled Chicken Recipe 
Ingredients:
  • 2-4 Chicken Breasts (preferably Organic + Free-Range)
  • 1/2 tsp. Sea Salt
  • 1 tbsp. Cayenne Pepper (adjust according to desired spice level)
  • 2 Sprigs Fresh Rosemary
  • 1 tsp. Curry Powder
  • 2 tbsp. Balsamic Vinegar
  • 1 tbsp. Herbs de Provence
  • 1 tbsp. Olive Oil
Directions:
  1. Stir spices, olive oil, balsamic, and herbs together.
  2. Rub mixture into chicken.
  3. Grill for 30-45 min or until cooked.
 
Roasted Brussels Sprouts Recipe 
Ingredients:
  • 2lb bag of Brussels Sprouts (halved)
  • 1 tsp. Sea Salt
  • 3 Sprigs Fresh Rosemary
  • 10-12 Garlic Cloves
  • Juice of 1 Lemon
  • 2 tbsp. Olive Oil
Directions:
  1. Pre-heat Oven to 450 degrees.
  2. Cut each Brussel Sprout in half (so that leaves are still attached at the root) and place into oven-safe container.
  3. Sprinkle Spices, Lemon Juice, Herbs, and Olive Oil on top.
  4. Bake for 40-45 min or until slightly browned.

  1. I'm going to have to try the Brussels sprouts. They are my least favorite vegetable, but that's because my parents never did anything to them to make them taste better.
