This is an easy lunch or dinner that can be paired with another protein or more veggies depending on your diet of choice! Our girls love the crunchiness of this yummy salad and it’s pretty filling too. It’s jam packed with raw veggies, plant-based protein, and all kinds of vitamins and minerals!

Now for the Recipe…

Here’s what you’ll need:


1/2 head of red cabbage – chopped

1 can of chickpeas, drained and rinsed

2 carrots cut into thin slices

1/3 cup of Kalmata Olives

1/4 cup sliced almonds

1 lemon

1 tbsp olive oil

1/4 tsp black pepper

Chop all the cabbage & carrots and add to bowl. Add olives, almonds & chickpeas. Squeeze lemon and drizzle olive oil on top. Season with pepper as desired.
