It's March and you'd think we'd seen the worst of cold/flu season by now. Unfortunately, everyone in our home is sick with a cold for the 3rd week running, with 3 kids it's hard to keep germs away especially when the cold gets passed from one kid to the next - ughhh! Not only that, but Coronavirus is a growing concern and antibacterial wipes, hand sanitizer and face masks are no where to be found. So we make soup, and pray for the best! We love this super easy garlic soup, it's immunity boosting, cold fighting and soothing to sore throats! It's also a favorite with the kids!</h3>

Here's the recipe:</h3>
<h4>
Ingredients:</h4>
<ul>
<li>2 onions, diced</li>
<li>4 heads of garlic</li>
<li>olive oil</li>
<li>64 oz of vegetable broth </li>
<li>1 sprig of fresh rosemary</li>
<li>Salt & Pepper to taste</li>
</ul>

Instructions:</h4>

<ol>
<li>Preheat oven to 375 degrees</li>
<li>Peel off outer layer of garlic peel (the white papery stuff)</li>
<li>Slice off the ends of the bulb (so it looks flat at the bottom)</li>
<li>Drizzle olive oil over bulbs, cover with foil and place into the oven</li>
<li>Roast for 45 minutes</li>
<li>Once the garlic is done let it cool</li>
<li>Medium dice the onions and sauté in olive oil until translucent</li>
<li>Add onions to blender or food processor with some broth</li>
<li>Squeeze garlic out of each clove into the blender/food processor</li>
<li>Puree until smooth</li>
<li>Add everything into the stock pot and pour in the rest of the broth.</li>
<li>Stir to combine</li>
<li>Add rosemary and salt/pepper</li>
<li>Bring to a boil then simmer for 10 minutes</li>
<li>Remove rosemary and serve.</li>
</ol>

Tuscan Kale & White Bean Soup</h2>

This soup is delicious and hearty, full of veggies and a favorite with our littles! It's also really easy to make and under 500 Calories per serving! This recipe makes 2 (Adult-Sized) Servings - it was enough for 2 kids and 2 adults in our house. If you want leftovers or seconds double the recipe.</div>

Ingredients:</div>
<div>
<ul>
<li>1 can of Cannellini (white kidney) beans</li>
<li>2 medium Carrots</li>
<li>24oz Vegetable Broth</li>
<li>1/2 small pack of fresh rosemary</li>
<li>2 garlic cloves</li>
<li>1 bunch of kale (any kind will work -but we prefer Lacinto Kale for this recipe)</li>
<li>1/2 yellow onion</li>
<li>black pepper</li>
<li>crushed red pepper</li>
<li>extra virgin olive oil</li>
<li>salt</li>
</ul>

Instructions:</div>

<ol>
<li>Wash and dry the fresh produce: carrots, kale, rosemary</li>
<li>Trim off the ends and peel the carrots. Small dice the carrots (1/4" cubes) and transfer to a bowl.</li>
<li>Preheat a medium saucepan over medium-high heat.</li>
<li>Trim off and discard ends of the onion and remove the peel. Small dice into 1/4" pieces and add to the bowl with the carrots</li>
<li>Open can of beans but don't drain it.</li>
<li>Add 2 tablespoons of olive oil to the saucepan and swirl to coat the bottom.</li>
<li>Add carrots and onions to saucepan; cook, stirring frequently, until the vegetables have softened, 3-4 minutes.</li>
<li>Remove rosemary leaves from stems and chop. Add to a small bowl.</li>
<li>Trim off and discard the root end of the garlic; peel and mince.</li>
<li>Add garlic and 1/4 tsp crushed red pepper to the saucepan; cook stirring constantly, until fragrant, 15-30 seconds.</li>
<li>Add the beans and their liquid, along with 3 cups of veggie broth, rosemary, 1/2 tsp salt, 1/4 tsp of pepper to the saucepan. Increase the heat to high and bring to a boil.</li>
<li>When soup comes to a boil, reduce the heat to a simmer, cover, and cook for 10 minutes.</li>
<li>While soup cooks, fold each kale leaf lengthwise, slice away and discard the stems, and chop the leaves into 1" pieces.</li>
<li>Uncover the saucepan, stir in the kale, then cover again and continue to cook until the kale is wilted, 2 to 3 minutes.</li>
<li>To serve, ladle the soup into a bowl. Enjoy!</li>

<b> What to eat? </b><br />
<br />
<b>Nut butter bars</b> - You can easily go to your local supermarket and buy Nut Butter suck peanut butter and macadamia nut butter cashew butter and make your own nut butter bars or you can buy commercially made bars like perfect bar at your local grocery store.<br />
<br />
<b>Omega-3 oils</b> - Omega-3 oils are a must you could either get them from a plant-based Source like flaxseed oil or algae oil or you could get an animal base or such as fish oil at your local natural food store. I recommend trying coromega.<br />
<br />
<b>Bone broth</b> - bone broth is good as a sipping / snack to eat when you're hungry on the first week while trying to restrict your calorie intake.<br />

<b>Vegetable chips</b> - vegetable chips such as kale chips and broccoli chips are a very good choice while on this diet.
Find a good branched chain amino acid supplement! This will keep you full longer and prevent you from losing muscle mass.

I am at 102.5 lbs - Finally! Still working on reaching our ultimate goals but getting much closer! When they arrived we decided to celebrate my bday and Joe's once more and one thing lead to another lol...and how can you possibly show anyone a good time in Austin without taking them to all the fabulous eateries :) Anyways we are back on the SCD hard-core and may even forfeit a few cheat days to make up for our sins...we need to look great for our vacation to Hawaii in June, so we have one tough month ahead of us...due to our cheating we did not notice any major weight gain - however we did not measure ourselves... will do so next weekend though to see where we are at.
